1 pound ground beef
1 large onion, chopped
1/2 bell pepper, chopped
6 teaspoons garlic, chopped
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon oregano
18 ounces of Rotel tomatoes
One 8-ounce can of tomato sauce
1/2 cup rice, uncooked
1 cabbage (about 2 pounds), shredded
2 cups grated cheddar cheese
In a little oil, fry the first seven ingredients
after mixing together. When cooked, remove from heat and set aside.
Mix the next three ingredients thoroughly and set aside. Shred cabbage
and set aside. Next, mix together all fried ingredients with the
tomatoes and rice mixture.
In a buttered 9-by-13-inch pan, layer half of
meat mixture, half of cabbage and half of cheese. Repeat layers,
ending with cheese. Cover pan with foil and bake 1-1/2 to 2 hours
in a 350-degree oven.
