Turkey Casserole

8-ounce package medium egg noodles, uncooked
1/2 cup onion, chopped
1/4 cup green pepper, chopped
1/4 cup margarine, melted
3 tablespoons flour
3 cups milk
1/4 cup Parmesan cheese
1 tablespoon poppy seeds
1 teaspoon salt
1/8 teaspoon red pepper
3 cups cooked turkey, diced
4-ounce jar diced pimento, drained
2 tablespoons Parmesan cheese

Cook noodles as directed on the package, drain well and set aside. Sauté onion and green pepper in a skillet until soft. Add flour, stirring until smooth. Cook for 1 minute, stirring constantly. Gradually add milk and cook over medium heat, stirring constantly, until thickened and bubbly. Stir in cooked noodles, 1/4 cup Parmesan cheese, poppy seeds, salt, red pepper, diced turkey and pimento; stir gently to keep noodles from tearing.
Spoon mixture into a lightly greased 9-by-13-inch baking dish. Bake, covered, at 350 degrees for 45 minutes. Uncover and top with 2 tablespoons of Parmesan cheese. Bake uncovered for an additional 10 minutes and serve.
