Quiche Lorraine

9-inch pie crust (frozen or homemade)
12 slices
bacon (about 1/2 pound) fried crisp and crumbled
1 cup
shredded Swiss cheese
1/4 cup
minced onion
4 eggs
2 cups
whipping cream or light cream
3/4 teaspoon
salt
1/4 teaspoon
sugar
1/8 teaspoon
cayenne pepper
Heat oven to
425 degrees. Prepare pie crust; sprinkle crumbled bacon, cheese
and onion in pastry-lined pie pan. Beat eggs slightly; beat in remaining
ingredients. Pour cream mixture into pie pan. Bake for 15 minutes.
Reduce oven
temperature to 300 degrees and bake 30 minutes longer or until a
knife inserted near center comes out clean. Let stand 10 minutes
before cutting.
