Chicken & Beans Skillet
1 package fresh boneless skinless chicken breasts, cut into 1-inch
2 teaspoons Cajun seasoning
1 medium onion, halved and sliced
1 tablespoon vegetable oil
1 16-ounce can red kidney beans, rinsed and drained
1 14-1/2 ounce can stewed tomatoes, undrained
4 cups hot cooked rice
Hot pepper sauce, optional
with Cajun seasoning. In a large skillet over medium-high heat,
cook chicken and onion in oil for 5 minutes, stirring frequently.
Add beans and tomatoes. Bring to a boil. Reduce heat; cover and
simmer 10 minutes or until juice of chicken runs clear. Serve chicken
and beans over rice. Serve with hot pepper sauce.
