1-3/4 cups flour
1 tablespoon sugar
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon cinnamon
2 eggs, slightly beaten
2 cups milk
2 ripe bananas, mashed (about 3/4 cup)
3 tablespoons butter or margarine, melted
1/3 cup finely chopped walnuts
In a medium mixing bowl, combine flour, sugar, baking powder, salt and cinnamon.
In another mixing bowl, combine eggs, milk, bananas and melted butter. Add to the flour mixture, stirring until just combined. Batter will be slightly lumpy. Stir in walnuts.
Cook over medium heat on prepared griddle and serve immediately when done or keep warm in a loosely covered, ovenproof dish in a 300-degree oven.
